What cheese can you make with one quart of milk?
I didn't get my usual 2 gallons of milk from the farm this week--but I still had a quart leftover from making Wensleydale last week. What to do?

- Boil milk
- Add acid (lemon juice or white vinegar)
- Strain through cheesecloth
- Press the cheese
There's not much of it, but certainly enough for a serving or to of palak paneer!
