What cheese can you make with one quart of milk?

I didn't get my usual 2 gallons of milk from the farm this week--but I still had a quart leftover from making Wensleydale last week.  What to do?

It's so easy and so fast! 
  • Boil milk
  • Add acid (lemon juice or white vinegar)
  • Strain through cheesecloth
  • Press the cheese
